In Colmar, Alsace, in the Grand-Est region of France, Le Maréchal is an authentic 16th-century half-timbered Alsatian mansion. Roland Bomo welcomes his guests to this hotel-restaurant, superbly decorated with period furniture. The rooms and suites, for example, are furnished in a variety of ways, depending on what antique dealers have found.

At the À l’Échevin restaurant, you can enjoy tasty recipes based on Alsatian products, accompanied by the region’s great vintages.
