Nine suites on the ground floor and Piano Nobile reveal individually crafted décors rooted in history: some open onto the paved courtyard and the 18th-century aromatic garden, others unveil vaulted ceilings or terraces offering romantic views over Ugento. Furnishings blend local antiques with bespoke walnut pieces, instilling a discreet elegance grounded in the terroir. In the restored old Masseria, twelve rooms extend this Mediterranean atmosphere, complemented by a pool nestled in the landscape and privileged access to concierge services for tailored discoveries.
The restaurant Il Tempo Nuovo, led by Chef Tommaso Sanguedolce, offers each evening a Daily Menu celebrating Puglian cuisine, emphasizing regional produce: fish and seafood sourced from local boats or selected at the market, alongside vegetables and herbs gathered in the estate’s aromatic garden. Dinners unfold atop the Norman Tower, in the softly lit courtyard, within vaulted salons or at the Chef’s Table for a fully immersive experience, while a guided stroll through the garden reveals over a hundred herbs and vegetables, inspiring the culinary journey.
In the castle’s former warehouses, the Puglia Culinary Centre offers Italian and local cooking classes in a space equipped with three Electrolux kitchens dedicated respectively to doughs, sweets and savory preparations, as well as Salento wine tastings in the historic cellar set within a 16th-century cistern. The concierge arranges bespoke experiences, blending cultural discoveries and convivial moments by sea or in town, elegantly extending the castle interlude.
